Homemade Jam! (using essential oils)

► pectin AND sugar free!!

If you are like me, you love making your own things at home. Fruits of course contain their own natural sugar, and pectin is found in some fruits (unripe strawberries being the best source). When cleaning the strawberries, keep the white unripe top portion on the strawberry since that is where the highest concentration of natural pectin is. I know for one thing, fruits already have enough natural sugar in them that sometimes the store bought jams can be so overly sweet. I didn’t realize how sweet they were until I started canning my own jams and counted the cups of sugar I poured in. First there was strawberry, then grape, then peach, and my favorite was blueberry.
But normally canning usually involves a pressure cooker, and heat – so I couldn’t add any essential oils. Until I found this recipe!

Recipe for some great strawberry jam:
  • 1 1/3 cup of strawberries
  • 2/3 cup rhubarb
  • 2 tbsn raw honey (or to taste)
  • 2 tbsn chia seeds
  • 10 drops of lemon essential oil
  • 5 drops of lavender essential oil

And that is all you need my friends! Now, take all of the ingredients and them blend them together in a food processor. You can blend it to the right consistency you like (I like mine smooth rather then chunky) and vary the recipe to your taste buds. Lavender is one of my favorite essential oils to eat, but that doesn’t mean everyone likes the taste of it. It’s pretty mild if you have one of the 8 oz canning jars. This recipe should be enough to fill up two of them.
