Chocolate Chip Cookie Dough Brownie Sandwich Cookies

OMG! these are UH-MAY-ZING ♥

who doesn't love chocolate AND cookie dough...together?? :O


ingredients:
• 1/2 cup unsalted butter
• 12 oz semi sweet chocolate chips
• 1 1/2 cups all-purpose flour 
(i used bread flour for mine)
• 1/4 cup unsweetened cocoa powder
• 1/2 tsp baking powder
• 1/4 tsp baking soda
• 1/2 tsp salt
• 1/2 cup packed light brown sugar
(i didn't have on hand light, so i used my dark sugar)
• 1/2 cup granulated sugar
• 3 large eggs
• 2 tsp vanilla extract*

 ► to make your OWN Vanilla, buy the CHEAPEST VODKA you can find (some i found are 2.00) some vanilla beans (WHOLE)..mix together in a large glass jar (i use ball brand) let sit for a month



Cookie Dough Filling

• 3/4 cup butter, softened
• 3/4 cup brown sugar
• 3/4 cup sugar
• 3 tablespoons milk
• 1 1/2 teaspoons pure vanilla
• 1 1/2 cups flour
• 1 1/2 cups chocolate chips


 Preheating oven to 325 degrees 

Brownie Cookie Directions::
• Add the butter and semi-sweet chocolate chips to a medium saucepan and melt over medium heat, stirring frequently.
Remove from heat.
• In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt and set aside.
• In the bowl of a mixer, whip together the light-brown sugar, granulated sugar, eggs and vanilla on medium-high speed until pale and fluffy, about 1 minute. 
• Using a rubber spatula stir in melted chocolate mixture, fold just until combined.
• Scoop a tablespoon of the dough out and shape into balls* 
(i use a small ice cream scooper)



• scoop cookie dough onto Silpat or parchment paper lined baking sheets
• Bake 12 – 13 minutes
• let cool and transfer to a cooling rack



 Cookie dough Instructions
(do this while the cookies bake/cool)

In a mixer bowl, cream together the butter and sugars until smooth; Mix in the milk and vanilla until combined. slowly pour in flour, mix/fold with spatula until combined. stir in the chocolate chips..

now here is the FUN part..even the KIDS can enjoy making these :)

take one cookie, place cookie dough on top, then place another cookie on top. voila!



 i use ONLY unsalted stick butter in my recipes.
this allows me to control the salt. 

*note* if you do not have stick butter; USE Shortening
(do NOT use margarine)
