Herbed Chicken and Tomatoes
Herbed Chicken and TomatoesIngredients:
• 8oz pasta OR just make 2-4 serving of Risotto (rice)
•1 1/2 tsp basil leaves
•1 1/2 tsp garlic powder
•1 tsp rosemary (crushed/dried)
•3 TBSP Flour
•1 1/2 lbs chicken (i just make enough for 5-6 people)
-usually 4-6 chicken breasts, you can also cut into pieces or strips too
3TBSP Olive Oil
1 small onion chopped
1 can diced tomatoes-drained (14oz) i use 2
1 1/2 cups chicken STOCK
2 TBSP half&half (NOT fat free)
Directions:
- cook pasta or rice according to directions. i ALWAYS use Chicken Stock when making rice. (same amount of liquid)
mix 1/2 of each seasoning in bowl-set aside and add 2tbsp flour
→ coat chicken with seasonings.
Cook chicken (i use cast iron skillet);add onion, 1tbsp flour, tomatoes, stock and leftover seasoning mix.
bring to boil, stirring occasionally.
reduce heat, simmer 5minutes.
stir in half & half, return chicken to skillet and heat thoroughly.
serve with rice or pasta.
